Dr. BBQ: Peachipotle Grilled Chicken Sandwiches

Here's how you can make Dr. BBQ's Peachipotle Grilled Chicken Sandwich. 

Ingredients: 

  • 6 boneless skinless chicken thighs
  • Olive oil
  • Dr. BBQ’s Peachipotle Dry Rub
  • ¼ cup sweet BBQ sauce
  • ¼ cup Mayonnaise
  • 6 slices Swiss cheese
  • 6 Brioche burger buns
  • 6 slices tomato
  • 6 leaves of romaine lettuce

Prepare the grill to cook directly over medium heat. Brush the chicken thighs lightly with olive oil, then season liberally with the Peachipotle Rub. 

Let it rest for 10 minutes. Meanwhile, in a medium bowl, combine the BBQ sauce and mayonnaise. Mix well and set aside. 

Grill the chicken thighs, flipping often until they reach an internal temp of 170° – about 15 minutes. Top each thigh with a slice of cheese and continue cooking until the cheese is melted – about 5 minutes. 

Transfer the thighs to a platter. Toast the cut side of the buns on the grill until golden brown – about one to two minutes. 

Place a lettuce leaf on each bottom bun. Top with a chicken thigh and a slice of tomato. 

Spread the top bun with the BBQ sauce/Mayo mixture and place it on the top of the sandwich. Serve with potato chips and enjoy!
