Sheet Pan BBQ Chicken Nachos
TAMPA - 2 cups cooked shredded chicken
¾ cup your favorite BBQ sauce
1 16-ounce bag of tortilla chips
2 cups shredded Cheddar Jack Cheese
½ small red onion, thinly sliced
2 roma tomatoes, seeded and cut into small dice
1 – 2 Jalapeños sliced thin on the mandolin
1 Tablespoon of your favorite BBQ rub
1 cup warm melted Velveeta
Preheat the oven to 350°. In a medium bowl, combine the chicken and the BBQ sauce. Mix well and set aside. Spread the tortilla chips evenly on a sheet pan. Top with the chicken distributing it evenly. Top with the cheese. Sprinkle the onion, tomato and jalapenos, spreading them evenly. Sprinkle with the BBQ rub and put it in the oven. Cook for 10-12 minutes until the cheese is melted. Remove from the oven and drizzle the melted Velveeta over the top. Garnish with sour cream, guacamole and chopped cilantro as desired.
