Piquant's Apple Crostata

Chefs Ricardo Castro from Petit Piquant shares their Apple Crostata recipe just in time for Thanksgiving.

Apple Crostata (European Style Apple Pie)

Serves 8 People

Cook time: About 1 hour 20 minutes

Ingredients:

-4 apples (2 Granny Smith 2 Macintosh)

-1/2 cup sugar

-2 T flour

-1 T lemon juice

-1 tsp ground cinnamon

-Coarse caster/sanding sugar as needed

 

Directions:

Preheat oven to 375 degrees.

For the crust, you can use a purchased one or make your own one. Roll the dough to a 12-inch round, about 1/8 inch thick, on a lightly floured surface. Transfer to a parchment-lined baking sheet. Refrigerate for 10 minutes.

To make the filling mix together the apples, granulated sugar, flour, lemon juice and cinnamon.

Spread filling over dough, leaving a 1 1/2-inch border. Fold edges in to form a crust, brush with egg wash and sprinkle with sanding sugar.

Bake crostata until apples are tender and crust is golden, about 1 hour 20 minutes. Let cool slightly and serve.
