Mama’s meatless chili

Ingredients

  • 12 ounces Beyond Meatâ Plant Based Protein
  • 2 tablespoons vegetable oil
  • 1 medium onion, cut into small dice
  • 1 medium green bell pepper, cut into small dice
  • ¼ cup mild chili powder
  • 2 tablespoons ground cumin
  • 1 teaspoon brown sugar
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon cayenne
  • 1 17oz box or can finely chopped tomatoes
  • 2 cups vegetable broth
  • 1 15oz can black beans, drained and rinsed
  • 1 15oz can kidney beans, drained and rinsed
  • 1 15oz can red beans, drained and rinsed

Directions

In a kettle over medium heat, warm the oil. Add the onion and bell pepper. Cook, stirring occasionally for a minute or two until they begin cooking. Crumble the protein into pot. Stir and keep cooking until the protein is cooked through, about 5 to 6 minutes. Add the chili powder, cumin, brown sugar, salt and cayenne. Mix well. Add the tomato and mix. Add the broth, mix and bring to a simmer. Add all the beans and mix. Bring to a simmer. Cover and cook at a low simmer for about 30–40 minutes until the vegetables are soft and the chili is thickened. Taste and add salt if needed. Add additional broth if it’s too thick for your liking.

Serve garnished with toasted pumpkin seeds if desired.

Makes about 8 servings.
